I am not a critic. I am not a guide. I am not a chef. I am a person who lives here and who likes to eat. What follows is not a list of the best restaurants in Cholula — it is the list of the places I go back to, the places I would recommend to a friend who arrives on a Friday night and asks where to eat well.
There is a market that opens every day of the week. There is a cemita stall that closes at six-thirty in the morning on Wednesday because it runs all night on Tuesday. There is a torta named after a woman and a puesto with the menu printed on paper where the food costs exactly what the paper says.
Thirteen places. One vouched by me with my name. Twelve with their source written beside them — the address, the hours when they are known, the price when one exists. When a fact is missing, the line says so rather than inventing one.
If you go to one of these places and the experience is not what you expected, write to me. If the place has dropped in quality, it comes off. Removing it is not hard.
